I got this old recipe from my mom-in-law. She also showed me her cook book from which I have taken down the recipes for some of the Mangalorean delicacies; this being one of them. It's yummy and delectable-Try it out!
Preparation time: 20 minutes
Cooking time : 45 minutes
Ingredients:
Mutton -1/2 kg, cut into medium size pieces
Ghee (a variant of clarified butter) - 5 tbsp
Onion - 1 big, chopped
Green chillies - 2
Coconut - 1/3 cup, grated
Garlic - 8 big cloves
Ginger - 1/2 '' piece
Coriander leaves - a handful, chopped
Tamarind paste - 1/2 tbsp
Poppy seeds - 1/2 tsp
Cinnamon - 1'' stick
Cloves - 3,
Green Cardamom - 1
Peppercorns - 5
Cumin seeds - 1/2 tsp
Tomato - 1 big, chopped
Salt - to taste
For garnishing - chopped coriander leaves
1. Broil the coconut in 1 tbsp of ghee till brown in colour.
2. In the same pan add another tbsp of ghee and fry the chopped onion.
3. When the broiled coconut and fried onions have cooled, beat them together with green chillies, coriander leaves, cinnamon, cloves, tamarind paste, peppercorns, poppy seeds, cardamom, cumin seeds, ginger and garlic to a fine paste.
4. Heat the remaining ghee in a pressure cooker.. When hot, add the green paste and mix well. Saute for a couple of minutes till the raw taste is gone.
5. Then add tomato, turmeric powder and salt. Saute till the tomatoes are soft and oil starts leaving from the sides.
6. Add the mutton pieces, mix well. Add a cup of water and close the lid. Cook for 4 whistles on high flame and 20-25 minutes on slow fire.
7. When the pressure is fully released, transfer to a serving bowl. Garnish with chopped coriander leaves and serve with boiled rice or fried rice.
