One of my friend's mom taught me this recipe, a couple of years ago. Undoubtedly, methi as a healthy ingredient adds on to the deliciousness of mutton!

Mutton: 1 kg, cut into medium size pieces
Coconut-Half, grated
Tomato-6, medium size
Onions-4, chopped
Green Cardamom - 4, crushed
Ginger- 2" piece
Garlic - 12 cloves
Kashmiri red chilli powder-2 tsp
Coriander seed Powder- 2 tbsp
Turmeric -1/2 tsp
Methi (fenugreek) leaves - two small cups
Oil-2 tbsp
Salt-as required

Method:
1. Blanch the methi leaves in boiling hot water for 5 minutes. Remove and beat it to a smooth paste.
2. Grind the grated coconut and tomatoes into a fine paste and set aside.
3. Grind together into a paste the ginger and garlic too.
4. Heat oil in a pressure cooker and saute the onions till they are brown in colour.
5. Add the Ginger-Garlic paste, Kashmiri chilli powder, Coriander powder,crushed Cardamom and keep stirring for 2-3 minutes.
6. Now add the Methi paste and salt and stir for a minute or two. Add the Coconut-Tomato paste next and stir occasionally until the oil starts leaving from the sides.
7. Add the mutton pieces and the stir well. Add water so as to cover the meat. Close the lid and cook on medium heat for 5 whistles and 20 minutes on slow fire.
8. Transfer to a serving bowl. Serve hot with rice, roti or parathas.
