I got this recipe from my closest friend in Chennai. I have called it 'Perambur Pork' as that's where we stayed in Chennai for over 5 years. It's the most favourite pork recipe of my son! It's the easiest of them all with minimum ingredients, but on the 'yumminess scale' beats the rest by a mile!
Preparation time: 10 minutes
Cooking time : 40 minutes
Ingredients:
Pork - 1 kg, cut into medium pieces
Onions - 4, medium size, chopped
Garlic - 15 cloves
Peppercorns - 10-15
Kashmiri dry chillies - 4-5
Turmeric - 1/2 tsp
Cinnamon - 2'' stick
Red chilli sauce - 1 tbsp
Salt - to taste
Water - 1/2 cup
Method:
1. In a pressure cooker, add all the ingredients and mix well.
2. Add 1/2 a cup of water, close the lid and cook on a high flame till 5 whistles. Continue to cook on a slow fire for 20-25 minutes. Turn off the heat.
3. When the pressure is fully released, open the lid. If it is watery, then on high fire cook while stirring continuously till all the water evaporates. (I did not heat after opening the cooker, as it was just perfect). You should aim for a saucy mix.
4. Serve with chapatis or fried rice.
