A Maharashtrian friend of mine gave me this recipe. I made this yummy laddoos for the first time for Diwali, last year :)
Preparation and cooking time - 45 minutes
Ingredients:
Peanuts - 500 gm
Jaggery - 2- 2 1/2 cups
Cashewnuts - 250 gm
Almonds - 250 gm
Dry coconut - 2 cups, grated
Ghee - to taste
Method:
1. Lightly broil the peanuts. Remove the skin and beat them to a coarse powder.
2. Beat the almonds and cashewnuts also to a coarse powder.
3. Mix the almond and peanut powder together.
4. Add the grated dry coconut to the above mixture.
5. Heat a pan, add jaggery along with 3/4 cup of water. Keep stirring till it starts to froth from the sides. Keep it on fire for about 2-3 minutes. Switch of the heat.
6. In a bowl take little of the peanut dry fruit mixture, then add the jaggery syrup to the desired quantity.
7. Make balls by applying ghee on your palms.Repeat this process till the whole quantity of the mixture is over.
8. Peanut laddoos are ready. Store them in an airtight container.
Tips:
Make the laddoos when the mixture is warm, or else will turn hard when cool.
