Spicy Squid Recheado Fry

This is one of those Goan recipes that I had collected during my stay in Chennai. It is spicy, rich in colour and a bit tangy. 'Recheado' is a Portuguese word that means 'stuffed' or 'filled'. Raechado masala is traditionally  used with fish especially with mackerels or pomfrets although it goes equally well with pork or chicken.

Preparation time - 15 minutes + marination time

Cooking time - 20-25 minutes



Ingredients :

Squid - 750 gm, cut into 1/2 '' pieces

Chilli Garlic Sauce - 1 tsp

Recheado masala - 3 tbsp

Tomato sauce - 2 tbsp

Garlic paste - 1/2 tsp

Salt - to taste

Coriander leaves - a few, to garnish

Method:

1. Marinate the squid with one and a half tablespoon of recheado masala, chilli garlic sauce and salt for 30 minutes.



2. Heat oil in a pan and add the garlic paste. Saute for a second or two.

3. Next, add the remaining recheado masala, tomato sauce and saute for two minutes.



4. Now add the marinated squid and stir well. Add a cup of water and close and cook stirring occasionally for 20 minutes. As the gravy turns saucy, take it off from heat.

5. Transfer to a serving dish and and garnish with coriander leaves.



If you cannot find ready recheado masala, you can prepare it easily with the following recipe :)

Recheado Masala

Ingredients:

Kashmiri chillies - 25

Garlic - 50 gm

Cloves - 8

Turmeric powder - 25 gm

Cumin seeds - 3/4 tsp

Mustard seeds - 3/4 tsp

Pepper powder - 1/2 tsp

Tamarind - marble sized ball

Ginger - 2'' piece

Fenugreek (Methi) powder - a pinch

Sugar - a pinch

Method:

Grind the above ingredients into a fine paste along with vinegar. The resulting paste is recheado masala :)
