Achinga Payar Mezhukkupuratty

Mezhukkupuratti is a style of preparation of vegetables like Vendakka (Lady's finger/Okra), Kovakka(Ivy Gourd), Beans, Potato and Achinga Payar(String beans/Long beans),especially in erstwhile central Tranvancore region of Kerala. It's a popular side dish. It' basically a stir fry and very easy to make.

Preparation time - 10 minutes

Cooking time - 20 minutes

Ingredients :

Achinga payar (String Beans) - 3 cups

Shallots - 12-15

Garlic - 8-9 cloves

Red chilli powder -1 1/2 tsp

Curry leaves - 2 sprigs

Mustard seeds - 1 tsp

Salt - to taste



Method :

1. Wash, clean and cut the achinga payar to an inch long pieces. Keep aside.

2. Blend together shallots and garlic to a smooth paste.

3. Heat coconut oil in a pan, add the mustard seeds. When they stop crackling add the curry leaves and give it a quick stir. Add the paste and saute till the raw smell goes.

4. Add the achinga payar, red chilli powder and salt. Mix well. Close the lid for 8-10 minutes. But after 5 minutes open and see if water is required. If required sprinkle water and close and cook till done.

5. Transfer to a serving bowl. Serve hot with rice especially kanji [ rice soup] or chapatis.
