This is a Punjabi recipe. Just to throw some light on the name of this recipe, 'Dhaba' is a road-side food stall in India and Pakistan that sells Punjabi food. The word 'gosht' is derived from the Persian language and it means 'meat'. In the context of Indian sub-continent, it means any meat-based gravy, especially mutton.

Preparation time - 3-4 hours of marination
Cooking time - 40 minutes
Ingredients:
Mutton - 1 kg, lean shoulder, cut into medium sized pieces
Yoghurt - 1 cup
Onion - 1 cup
Tomato - 1/3 cup
Green chillies - 2, slit
Ginger paste - 1 1/2 tbsp
Garlic paste- 1/2 tbsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Red chilli powder - 1 tsp
Turmeric powder - 1 tsp
Garam masala powder - 1 tsp
Bay leaves - 2
Cloves - 4
Green cardamom - 4
Oil - 4 tbsp
Salt - to taste
For garnishing :
Coriander leaves - 2-3 tbsp, finely chopped
Ginger julienne - 1 tbsp
Method :
1. Marinate the mutton, with yoghurt, salt, red chilli, turmeric, cumin and coriander powders for 3-4 hours.
2. Heat oil in a pressure cooker, put in the bay leaves, cloves and cardamom and stir fry for a minute. Add the onions and saute till golden brown. Add the ginger and garlic pastes and stir for a minute or two.
3. Add the marinated meat along with the marinade, fry for 5-6 minutes. Add the chopped tomato and slit green chillies and mix well. Stir continuously till the oil floats.
4. Add the garam masala powder and mix for a minute. Add water and mix. Close the lid of the cooker and cook on high heat for 4 whistles and simmer and cook for 15 monutes.
5.Transfer to a serving dish and garnish with chopped coriander leaves and ginger julienne.
