Naga Pork

This is an old, delicious recipe from my collection. It is from Nagaland, a North-Eastern state of India. Traditionally, bamboo shoots or dried soya beans are used along with pork. Here, I have made a change by using chicken sausages.

Preparation time - 30 minutes
Cooking time - 40 minutes

Ingredients:

Pork - 1 kg, cut it into medium size pieces

Potato - 4, cubed

Onions - 3, big, finely chopped

Garlic paste - 2 tbsp

Ginger - 1'' piece, finely chopped

Green chillies - 2, slit

Garam masala - 1/2 tsp

Red chilli powder - 1 tbsp

Turmeric - 1 tsp

Chicken sausages - 12 [2'' size] or Approx 250 gm

Mustard oil -3+2 tbsp

Salt - to taste



Method :

1. Boil the potatoes in a cooker for 2 whistles. Take off from heat.

2. Heat 3 tbsp oil in a pan, add the pork pieces and stir fry till they turn brown. Remove from pan and keep aside. Repeat the same for the remaining pork.

3. Quarter the sausages and stir fry in the same pork oil. Keep aside.

4. Heat another 2 tbsp oil in a pressure cooker, add the garlic paste and stir till brown. Add the ginger and stir. Add chopped onions and green chillies and saute till the onions turn brown.

5. Add the browned pork and mix well.

6. Add the red chilli powder, turmeric,garam masala and salt. Mix well.

7. Add 1 cup of water and close the cooker. Cook for 4 whistles on high heat and simmer and cook for 20 - 30 minutes depending on the pork. Put off the heat.

8. When cooled, add the potato pieces and sausages and mix well. Keep it on medium heat for 7-8 minutes and then, put off the heat.

9. Transfer to a serving bowl. Serve hot with rice or noodles.
