Vathalappam

This is a dessert that has its origin in Kerala. It is prepared in other parts of South India too especially by Muslim families in Tamil Nadu as a Ramadan treat :) It can be made richer by adding cashew nuts, raisins and dry fruits. Here, I have shared with you the basic version which is no less yummy!

Preparation time - 10 minutes
Cooking time - 30 minutes

Ingredients :

Milk - 300 ml

Coconut milk - 400 ml

Jaggery - 400 gm

Sugar - 100 gm

Eggs - 8

Cardamom powder - 2 tsp



Method :

1. Whisk the milk, coconut milk and eggs well. Melt the jaggery and strain it.



2. Caramelize the sugar with 1/2 cup of water till it turns to deep golden brown. Pour it into a plate and keep aside.




3. Add the melted jaggery into the milk mixture and mix well.

4. Now pour the whisked milk mixture over the caramelized sugar and sprinkle the cardamom powder over the mixture.

5. Place the plate in a steamer and cook till the whistle blows strongly and simmer and cook for 5 minutes. Open and check, it has to have a custard like consistency.



6. Once done remove from the steamer and keep it to cool.

7. Refrigerate for an hour or till serving time. Remove it and cut it like cake.

8. Serve it cool.
