Mixed Corn Stir Fried Rice

This is a Fried rice recipe that I have in my collection that I modified by adding sweet corn kernels and the chicken sausages. The red and yellow peppers, carrot, cabbage and corn kernels make this dish vividly colourful !  It can be had on its own or or with any sauce based gravy of chicken as it goes really well with it :) I prefer it as it can be prepared quickly with relative ease. As for the ingredients, some of them can be considered as optional although the taste may get compromised to some extent.

To share some interesting facts about Capsicums aka Bell Peppers, they are botanically considered as fruits but in culinary sense as vegetables! And yes, like many other fruits and vegetables they are native to Latin America! Christopher Columbus and other Spanish and Portuguese explorers brought them to Europe  and named them mistakenly as Peppers!They are packed with anti-oxidants and Vitamin C, especially the red peppers. So, overall, I rate this recipe as healthy!

Preparation time :10 minutes

Cooking time : 15-20 minutes

Ingredients :

Onions - 2, diced

Chicken sausages - 10[2'' sausage], cut into round slices

Red peppers (capsicum) - 1, sliced

Yellow peppers (capsicum) - 1, sliced

Cabbage - 1 cup, diced

Carrot - 1, grated

French beans - 10,chopped

Sweet Corn kernels - 1 1/4 cup

Black pepper - 1/2 tsp

Basmati rice - 4 cups, cooked

Salt - to taste

Oil - 4 tbsp




Method :

1. In a wok, heat oil, stir fry the chopped beans for 2-3 minutes. Add the cabbage, red and yellow peppers and fry for 2-3 minutes.

2. Sprinkle the pepper powder and stir well. Add salt, chicken sausages and the boiled corn kernels, toss well.

3. Add the cooked basmati rice and toss till well mixed. Check the seasoning. You can add soya sauce and scrambled eggs if you like. Here I have not used as I like it light and not too heavy.

4. Finally, add the grated carrot and give it a quick toss. Transfer to a serving bowl. Serve hot.
