I wanted to try a different pork recipe from the traditional ones from Goa and Mangalore that I have already uploaded. As I browsed through the internet I came across a recipe for pork on picturetherecipe.com by Noreen that used brown sugar. A quick read and a few modifications led to one of the yummiest yet simple pork chop dish! It's sticky, sweet and mildly spicy that is best had when it is mildly hot.
It's a must-try recipe..so, here, I go..
Ingredients:
Pork - 500 grams, rib meat
Brown Sugar - 1/4 cup
Paprika- 1 tsp
Ginger Powder - 1/2 tsp
Black Pepper - 1/2 tsp
Onion - 1/2, medium, cut into cubes
Oil - 2 tbsp
Scallion - 1 stalk, finely chopped, for garnishing
Method:
1. Mix together pork pieces, salt and pepper powder. Put it in a pressure cooker along with 1/2 cup of water.
2. Pressure cook on high flame for 4 whistles and on slow fire for 15- 20 minutes. When the pressure is released open the cooker and take the pieces in another bowl.
3. In a bowl mix together brown sugar, paprika, ginger powder and salt. Mix well.
4. Now add the pork pieces and smear them well with the prepared powder and keep aside.
5. Heat a pan with oil smeared very well add the diced onions and saute till the onions turn golden.
6. Now add the cooked meat which is smeared with the prepared powder mix. Stir carefully. turn sides when it turns dark.
7. Add the remaining powder mix to the pieces and stir slowly. When it starts to caramelize stir carefully till the caramel sauce thickens and becomes sticky.
8. Transfer to a serving dish and garnish with chopped scallion.
9. Serve hot with fried or zeera rice, or rotis.
