Japanese Ginger Pork

This is a favorite Japanese Pork recipe with my family! I came across this recipe at http://www.justonecookbook.com/ by Nami. In Japanese, this pork is known as Shogayaki.  In Japan, as far as popularity ratings are concerned, it is next only to Tonkatsu, another pork recipe, that I will share with you soon!

This recipe is simple and easy to prepare. I have made a few minor changes in the ingredients as well as to the method of cooking so that the pork will be well-cooked.

Preparation time - 10 minutes
Cooking time -  40-45 minutes

Ingredients:

Pork - 500 gm, rib meat, sliced thin

Onion - 1/2, cubed

Garlic - 2 clove

Ginger - 1'' piece, finely chopped

Salt - to taste

Black Pepper - 1/2 tsp

Oil - 2 tbsp

Scallion - 1, finely chopped

For Seasoning:

Soya sauce - 2 tbsp

Rice wine - 3 tbsp (Sake and Mirin can be used instead in equal proportions)

Sugar - 1 1/2 tbsp (optional)


Method:

1. Pressure cook the pork pieces with pepper powder and salt. Cook on high flame for 4 whistles and     on slow flame for 20- 25 minutes.

2. When the pressure is fully released, open the cooker remove the pieces and place them in a flat            bowl.




3. In a bowl grate onions, ginger and garlic.To it add the soya sauce, rice wine and sugar.

4.In a large non stick pan, heat oil on medium heat. Put in the pieces in a single layer only. Turn the      side when the bottom side turns golden in colour.

5. Add the seasoning and cook for 3-4 minutes only do not over cook the pieces. Add the chopped           scallion and serve.

6. Goes well with fried rice and paratas.
