Ingredients:
Mutton-1 kg, cut into medium sized pieces
Onions -6, medium sized, sliced
Kashmiri red chillies- 15
Coriander seeds - 1.5 tsp
Cumin seeds- 1.5tsp
Caraway(Shahi Jeera) seeds- 1tsp
Black Peppercorns- 10-15
Cloves- 8
Green Cardamom- 7
Black Cardamom- 3
Poppy seeds- 2 tsp
Dried Coconut - grated,1 cup
Vegetable Oil - 6 tbsp
Turmeric powder- 1 tsp
Garlic paste - 2 tbsp
Ginger paste- 2 tbsp
Salt-to taste
Method:
1. Broil the coriander seeds, cumin seeds, caraway seeds, black pepppercorns, cloves, green and black cardamoms in a pan on low heat till they start to emanate fragrance. Add poppy seeds and the grated dried coconut and continue to broil for a couple of minutes. Now, add Kashmiri red chillies and continue broiling for another 2-3 minutes. Allow the ingredients on the pan to cool.
2. In the meantime, heat oil in a pressure cooker and saute till they are almost brown.
3. Now, add mutton pieces to the cooker and saute them on high heat till they are well-browned.
4. Add turmeric powder, garlic paste and ginger paste to mutton and mix well and continue to saute.
5. Grind the broiled ingredients in a mixer along with little water into a fine paste. Add this paste to the mutton and mix well.
6. Add 2 cups of water and salt and mix well.
7. Close the cooker and cook on high flame for 5 whistles and then let it simmer for 20 minutes. Take it off the gas.
8. Open the cooker lid once the pressure has completely reduced. Serve hot with rice or Chapatti.
