Squid Pepper Fry

This is one of the many pepper squid recipes from my collection. It's an easy and tasty recipe. The coconut oil and the coconut chunks give a very unique taste, a taste of God's own country cooking. It's a dish all seafood lovers would cherish.........

Ingredients:
Squids: 500 gm, diced
Shallots: 3/4 cup, finely chopped
Ginger paste:1 tbsp
Garlic paste: 1 tbsp
Green chilli: 2 cut slant
Black pepper powder: 2 tbsp + 1 tbsp
Turmeric powder: 1/2 tsp
Coriander powder: 1 and 1/2 tsp
Lime juice: 2 tbsp
Salt to taste

For tempering:
Coconut oil: 3 tbsp
Mustard seeds: 1 tsp
Curry leaves: 2 sprigs

For garnishing:
Coconut chunks: 4 tbsp, fried till golden
Fried curry leaves

Method:
1. Clean, wash the squid with rock salt and water. Lastly wash with warm water and put in a colander to drain out the water.
2. In a bowl mix together pepper turmeric and coriander powders along with lime juice,ginger garlic paste and salt. Keep to marinate for an hour.

3. In a clay pan/ earthen vessel, heat the oil, when hot add mustard seeds and let it splutter. Later add the shallots and fry till they are golden in color.
4. Add the curry leaves, green chilli, ginger garlic paste and saute well till the oil starts to bubble at the sides.

5. Now add the marinated squids along with the marinade. Mix well, close and cook on medium flame for 15 minutes. Check the seasoning. Add half of the fried coconut chunks and curry leaves and mix.

6. Do not add water as the squids give out water. Open and cook on medium heat till the water is all gone and the squid fry is of dry consistency.
7. Transfer to a serving bowl and garnish with fried coconut chunks and curry leaves.
8. Serve hot with rice, chapatis or rotis as side dish.
