Squid Roast


Squid roast is called Koonthal Varattiya or Koonthal Roast.A recipe for seafood lovers. It is a good mix of spices with the shallots and the distinct taste of squids makes it worth a try !!!!!!
Ingredients:

Squid: 500 gm
Shallots: 1 cup, finely chopped
Fennel seeds: 1 tsp
Green chilli: 1 slit
Ginger paste: 1 tbsp
Garlic paste: 1 tbsp
Curry leaves: 1 sprig
Turmeric powder: 1 tsp
Red chilli powder: 1 and 1/2 tsp
Coriander powder: 1 tbsp
Tomato: 1 big/ripe, finely chopped
Salt to taste
Coconut oil: 3 tbsp

For garnishing:

Garam masala: 1/2 tsp
Fried curry leaves: 1 sprig

Method: 

1. Clean and wash the squids well. Cut into strips and smear with salt and turmeric powder and keep aside.
2. In an earthen vessel, heat oil, add the fennel seeds after they stop spluttering, add the shallots, stir till they are translucent.
3. Add the ginger garlic paste and the slit gree chilli and saute till the raw smell goes. Add the turmeric, red chilli, pepper and coriander powders and saute till you get a nice aroma of the spices.
4. Add the squids cut into strips and mix well till they are coated with the masala. Do not add water as the squids give out water. Check the seasoning, close and cook on medium flame for 10 minutes. Do not over cook them, they will turn rubbery.
5. Transfer to a serving bowl and garnish with garam masala and fried curry leaves.
6. Serve hot with chapatis, rotis or rice.
