Andhra Pork


A yummy pork recipe from Andhra!


Ingredients:
Pork: 1 kg
Garlic : 20 cloves
Black peppercorns: 1 tbsp
Red chilli powder: 1 tbsp
Turmeric powder: 3/4 tsp
Coriander powder: 3 tbsp
Curry leaves: 1 sprig
Mustard seeds: 1 tsp
Oil: 3-4 tbsp
Salt to taste

Method:
1. Cut the pork into small pieces, wash and drain the pieces in a collander.
2. Grind together garlic cloves and pepper corns, to a smooth paste.
3. Heat oil in a flat bottomed pan, add the mustard seeds, when they stop spluttering add the curry leaves and the ground paste and stir well till the raw smell goes.
4. Add the turmeric,red chilli and coriander powders and saute till the oil starts to float.
5. Now add the pork pieces and mix well, keep stirring for 5-6 minutes. Add salt and a cup of water and mix well cover and cook on medium flame for 15 minutes stirring occasionally.
6.Check the seasoning and keep on cooking on slow flame. If you want gravy put it off once the pork is done. Or keep stirring till you get the pieces dry and well coated with the masala.
7. Transfer to a serving bowl, serve hot withrice or chapattis.
