In Konkani, Aad Maas literally translates to 'Bone Meat'. This Goan Pork recipe is rich, spicy and mouth watering!!
Ingredients:
Pork- 1 kg with bones, cut into small pieces (preferably meat with ribs)
Onions -2, large sized, finely sliced
Vinegar- 1/4 cup
Tamarind water- 1 cup
Water- 2 cups or as required
Sugar - a pinch
Salt - to taste
For the masala:
Kashmiri Red chillies - 12
Garlic- 6 cloves
Ginger -1 inch piece
Cloves -7
Green Cardamom - 3
Cinnamon - 6 sticks,each 1 inch long
Peppercorns - 10
Cumin seeds- 1 tsp
turmeric powder - 1/2 tsp
Method:
1. Marinate the pork with salt and the coarsely ground masala paste for a couple of hours.
2. In a pan, add the pork, onions, tamarind water and water. Mix it again and start cooking on medium heat.
3. After around 20 minutes of cooking, add the sugar and the vinegar. Add salt, if needed.
4. Continue cooking for another half an hour or so on medium heat, until the pork is cooked and meat easily separates from the bones.
5. Serve with Sannas and rice. It tastes better the next day and like most pork recipes, subsequent heating makes the Aad Maas yummier!
