Ingredients:
Pork - 1 kg, ribs
Onions - 2 medium, chopped
Tomato- 1, chopped
Green chillies - 2, slit and de-seeded
Potato - 4, large, peeled and quartered,
Vinegar - 2 tbsp
Tamarind water - 1 cup
Water - 1 cup
Sugar - a pinch
Coriander leaves - a few, finely chopped
Salt - to taste
For the Masala:
Dry red Kashmiri chillies - 6
Garlic - 6 cloves, large
Ginger- 1 inch piece
Cloves - 6
Green cardamom - 3
Cinnamon - 2 sticks, 2 inch each
Peppercorns -10
Cumin seeds - 1 tsp
Turmeric powder - 1/2 tsp
Method:
1. Heat oil in a pan and saute the chopped onions till they are golden brown.
2. Add the tomatoes and saute them till they are pulpy.
3. Stir in the ground masala paste and continue stirring for a couple of minutes.
4. Now add the Pork ribs, potatoes, green chillies,the tamarind water and water. Cover and cook on low heat for 20 minutes.
5. Now, add the potatoes, vinegar and the sugar. Add salt to as required.
6. Cover and continue to cook on low flame until the ribs and potatoes are tender.
7. Garnish with coriander leaves.
