This recipe is from the Indian state of Odisha. Odia cuisine is rich and varied with a culinary tradition spanning centuries. Fish, crabs and other seafood are very popular among the Odia people and I will surely try out a Odia recipe with seafood soon! But for now, let's enjoy this Odia Chicken with spices!
Preparation time - 15 minutes
Cooking time - 25 minutes
Ingredients:
Chicken - 500 gm
Mustard oil - 2 tbsp
Onions - 2, chopped finely
Ginger-Garlic paste- 1 tsp
Coriander paste - 1 tsp
Cumin paste - 1 tsp
Chilli paste - 1 tsp
Turmeric - 1/2 tsp
Garam Masala Powder -1/2 tsp
Bay leaf -1
Cinnamon - 1''
Cardamom - 2
Cloves - 2
Mace (Javitri) - small piece
Coriander leaves - a few, chopped
Method:
1. In a Kadai, heat the mustard oil. Add the bay leaf, cinnamon, cardamom, cloves and mace. Saute for a minute and then add the chopped onions. When it turns brown, add the ginger-garlic paste and saute further.
2. Now add the coriander paste, cumin paste, chilli paste and turmeric powder. Mix well and add 2 tbsp of water.
3. Add the chicken pieces and keep stirring till they turn brown. Add a couple of tablespoon of water and cover and cook for 10 minutes.
5. Now add the garam masala powder. Stir and add the chopped coriander leaves too. Mix and cook till done.
6. Serve hot with rice.
