Puri and Bhaji

This is my favourite breakfast! Though you get it at every eatery, it is easy to make at home ...so, why not try ???!!!!

Preparation time - 30 minutes

Cooking time - 30 minutes

Ingredients:

Wheat flour - 300 gm

Rava - 1/4 cup

Salt - to taste

Oil - to fry the puris

For the bhaji :

Potatoes - 4 big, boiled and mashed

Peas 1/2 cup

Cauliflower - 1 cup. cut to small pieces

Cashewnuts - 1/2 cup

Coriander leaves -1/4 cup, chopped

Curry leaves 2-3 sprigs

Greenchillies - 2 chopped

Onions - 2 big, finely chopped

Ginger paste -1 1/2 tsp

Turmeric powder - 1 tsp

Mustard seeds - 1 tsp

Oil - 3 tbsp




Method: 


1, Knead the flour with warm water and salt. Knead to a stiff soft dough. Close and keep aside for awhile.

2. Make lime size balls and roll the out. Place them on paper.

3. Heat oil in a kadai, slowly put in the rolled out puris. When it turns golden brown turn it over.     When done, remove and place on an absorbent paper.

4. Repeat with all the rolled out puris.

To make the bhaji:

1. Heat oil in a deep bottomed pan, put in the mustard seeds. When they splutter add the curry leaves.

2. Add the onions and saute till they are translucent add the green chillies and ginger paste. Stir for a minute or two.

3. Now add 1 1/2 cup of water, close and cook till it boils. Add the cauliflower florets,cashew nuts and peas. Cook till they get done. Add the mashed potatoes mix well. Add salt and turmeric powder. Mix well.

4.  Put of the heat if the desired consistency. Transfer to a serving bowl and garnish with coriander leaves. Serve hot with the puris.
