Curry Leaf Chicken is a simple, healthy yet delicious chicken preparation! I had first tried this recipe in 2001! Although, in many recipes we use curry leaves for seasoning, this is one of those recipes where they are part of the main ingredients!
Many studies and research have pointed towards the anti-inflammatory, anti-carcinogenic and anti-diabetic properties of curry leaves. So, unreservedly, I recommend this recipe to you all!
Preparation time : 10 minutes+ half an hour marination
Cooking time : 20 minutes
Ingredients :
Chicken - 1 kg, cut into medium sized pieces
Onions - 2, halved and finely sliced
Thick yoghurt - 2 tbsp, heaped
Red chilli powder- 1/2 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Green chillies - 2, slit
Oil - 3 tbsp
Fresh Curry leaves - 15-20
Salt - to taste
Method :
1. Marinate the chicken along with yoghurt,cumin, coriander and red chilli powders and salt for half an hour.
2. Stir fry the onions till they turn brown. Keep aside.
3. Heat oil in a deep bottomed pan. Add the curry leaves. Then, add the marinated chicken along with the marinade and slit green chillies. Stir continuously for 5-6 minutes.
4. Cover and cook till the chicken is almost done, stirring occasionally. Add the browned onions and mix well.
5. Transfer to a serving bowl. Serve hot with rotis or chapatis.
