Methi na Thepla

This is a Gujarati delicacy. The theplas are light as well as healthy. They are a variant of parathas, which can be stored for 2-3 days. These Indian flat breads are made from fenugreek leaves, wheat flour and spices. If you love to make and eat Gujarati food, then you must try theplas!

Preparation time : 10 minutes+ 15 minutes
Cooking time : 3 minutes per thepla

Ingredients :

Whole wheat flour - 3 cups

Oil - 2 tbsp

Yoghurt - 1 cup

Red chilli powder - 1/2 tsp

Turmeric powder - 1/2 tsp

Cumin powder - 1 tsp

Garlic - 1 tbsp, minced

Fenugreek leaves - 2 tbsp, finely chopped [fresh or dried-I used the fresh one]

Coriander leaves - 1/3 cup, finely chopped

Salt - to taste

Water - 1/3 cup, approx

Method :

1. In a bowl mix wheat flour and oil and mix well.

2. In another bowl mix together yoghurt, salt, red chilli, turmeric and cumin powders, minced garlic, and finely chopped fenugreek and coriander leaves . Mix well.

3. Add this yoghurt mixture to the flour and mix well. Add warm water if needed to make a firm yet soft dough. Drizzle oil on the top of the dough, so it doesn't form a crust. Cover  and keep for 15 minutes.

4. Make golf-sized balls and roll out just like chappatis. Roll out and place on a hot tava and cook. When the color starts to change flip the side and drizzle oil on the top and smear a little.

5. Flip sides again and drizzle and smear the oil. Press with a spatula till golden in color. Take off the tava. Serve hot or store in a casserole till serving time. Serve with pickle.
