Sheer Khurma is a popular breakfast pudding among Indian sub-continent Muslims on Eid-ul-Fitr. It literally means 'milk with dates' in Persian. I love to have this as a dessert whenever I am in a celebratory mood :)
Cooking time - 50 minutes to One hour
Ingredients :
Vermicelli - 1/2 cup
Fat milk - 5 cups [1 litre]
Sugar - 1/4 cup
Butter - 2 tbsp
Cardamom powder -1/2 tsp
Nuts :
Dates - 4 tbsp
Cashew nuts -10-15
Charoli - 1 1/2 tbsp
Raisins - 2 tbsp
Almonds - 10- 15
Method :
1. Finely chop almonds, charoli, dates and cashew nuts. Boil the milk in a saucepan. Keep heating till the milk reduces to half its quantity.
2. In a pan, heat the butter and add the raisins, cashew nuts and almonds. Stir till they change color. In the same pan stir fry the vermicelli till golden in colour.
3. To the pan, add half the quantity of the milk and cook the vermicelli till soft. When soft and cooked add sugar and cardamom powder. Add dates to the remaining milk and let it soften.
4. Now add the remaining milk along with the dates and stir. Add the roasted nuts and rose water. Stir gently and keep on heat for 2-3 minutes.
5. Transfer to a serving bowl. This can be had as hot or cold.
