Sweet Corn and Carrot Stir fry

This is another healthy and delicious vegetarian recipe from my collection. I recommend you try out this Corn and Carrot Combo!


Preparation time : 15 minutes
Cooking time :20 minutes

Ingredients :

Sweet corn kernels - 3 cups

Carrot - 2 medium sized, grated

Onion - 1, finely chopped

Ginger - 1/2'' piece, finely chopped

Dry red chillies - 4

Mustard seeds - 1 tsp

Split black lentils - 1 tbsp

Curry leaves - 1 sprig

Lemon juice - 1 tsp

Coriander leaves - 1 1/2 tbsp, finely chopped

Oil - 1 tbsp

Salt - to taste




Method :


1. In a pressure cooker,  boil the sweet corns in 1 cup of water and 1/2 tsp salt. Cook for 1-2 whistles on high heat.

2. When cooled, remove the kernels from the cob. Keep aside.

3. In a pan heat oil, add the mustard seeds. When they stop crackling add the split lentils, curry leaves and dry red chillies. Give it a quick stir.

4. Add the onions and saute till they are translucent. Add the grated carrot and ginger and stir for 3-4 minutes. Add the lemon juice and salt, stir for a minute.

5. Finally,add corn kernels and mix well. Check the seasoning. Transfer to a serving bowl and garnish with coriander leaves.
