Andhra Prawn Gravy

It's one of my favorite prawn recipes got from my aunt. She lived in Vizag and I remember her cooking this recipe; the taste of the prawns melting in the spices and the hotness of the dry red chillies!!. Here I have sobered down the hotness of the chilli powders.



Ingredients:

Prawns: 300 gm
Onions: 2 big ,finely chopped
Ginger paste: 2 tsp
Garlic paste: 2 tsp
Tomatoes: 2, finely chopped
Curry leaves: 1 sprig
Red chilli powder: 4 tsp
Coriander powder: 3 tsp
Garam masala powder: 1 tbsp
Turmeric powder:1/2+ 1/2 tsp

For the Powdered Masala:

Bay leaves: 1
Green cardamom: 2 pods
Cloves: 2
Carom seeds: 1/2 tsp



Method:

1. In a flat pan broil the bay leaves, cardamom, cloves and carom seeds together till you get the aroma of the spices. When cool powder the broiled spices to a fine powder.
2. De vein, clean and wash the prawns, put them in a colander and keep aside for the water to drain.
3. Add 1/2 tsp turmeric and 1/2 tsp salt and mix well. Keep aside.
4. In a deep bottomed pan add oil, when hot add the onions and stir fry till they are translucent.
5. Add the ginger and garlic pastes and stir well till the raw smell goes.
6. Add the chilli powder, turmeric powder,coriander powder, garam masala powder and mix well.
7. Add the chopped tomatoes to the masala and stir till the oil bubbles at the sides or floats on the top.
8. Add the prawns and mix well, till all the prawns are well coated with the masala. Check the seasoning.
9. Cover and cook on slow flame for 7-8 minutes. Sprinkle a little water if needed.
10. Garnish with finely chopped coriander leaves.
11. Transfer to a serving bowl. Serve hot with rice, chapatis or butter naans.
