Andhra Style Stir Fried Prawns

One more yummy prawn recipe from Andhra:) By the way, in Telugu, prawns are called 'Royyalu'. Check this recipe out!!

Ingredients:

Prawns: 350 gm
Onions: 2 medium, finely chopped
Green chilli: 2 slit
Ginger paste: 1 tsp
Garlic paste: 1 tsp
Garam masala powder: 1 and 1/2 tsp
Red chilli powder: 1tbsp
Turmeric powder:1/2 tsp
Cumin seeds:1 tsp
Curry leaves: 1 sprig
Salt to taste


For the marination:
Red chilli powder: 3/4 tsp
Coriander powder: a pinch
Ginger paste: 1/2 tsp
Garlic paste:1/2 tsp
Juice of 1 lime
Salt: 1 tsp
Coriander leaves: 1 tbsp finely chopped

For garnishing:
Coriander leaves: 3 tbsp, finely chopped
Fried curry leaves: a few



Method:

1. Clean, de vein and wash the prawns, put in a colander to drain off the water.
2. Take the prawns in a bowl and add salt, ginger paste, garlic paste, lemon juice, coriander leaves, coriander and red chilli powder and marinate for 30 minutes.


3. Heat a heavy bottomed pan, add oil, when hot add the cumin seeds, when they stop spluttering, add the curry leaves and keep stirring till you get the aroma of curry leaves and they become crisp. Take a couple of them and keep them aside for garnishing.
4. Add the chopped onions and stir fry till they turn pink, now add a pinch of salt so they cook faster, till they are golden brown.
5. Add the ginger and garlic paste, keep stirring or else it will get stuck to the bottom.
6. Add the marinated prawns, mix well. Keep stirring for 3-4 minutes.
7. Add the red chilli powder, turmeric powder and the garam masala powder and mix well till the powders are well mixed with the masala.
8. Add 1/4 cup of water, give it a quick stir, close and cook on medium flame for 5-6 minutes. Check the seasoning.(I added the water to the bowl which had the marinated prawns, swirled the water and added it).
9. Take off from heat. Transfer to a serving dish, garnish it with coriander and fried curry leaves.
10. Serve hot with chapati, roti and rice.
