Dry Chicken Masala


This recipe I uploaded today, was made at home, usually when we had dal curry. It is an easy recipe, yet tasty because of the masala powder. It can be shredded and cooked or cooked and shredded and rolled in chapatis like katti rolls and children will like to eat them...



Ingredients:

Chicken: 1 kg
Ghee: 4 tbsp
Black cumin seeds: 1 tsp
Curry leaves: 1 sprig
Onions: 2, big, finely chopped
Turmeric powder: 1/2 tsp
Ginger paste: 1 tbsp, heaped
Garlic paste: 2 tsp, heaped


Masala to Broil:

Kashmir red chillies: 10
Coriander seeds: 4 tsp
Green cardamom: 3-4
Black cardamom: 1
Cinnamon: 1 inch stick



Method:
1. Clean, wash and pat dry. Take the pieces in a bowl, add a little salt and a pinch of turmeric powder and mix and keep aside.
2. Heat a pan, add the masala to broil. First add coriander seeds, when it changes color, add the cardamoms and lastly add the red chilies,cinnamon and stir for 3-4 minutes or till you get the aroma of the spices.
3. When cool, beat the masala to a fine powder. Keep aside.
4. Heat a kadai, add ghee, add the black cumin seeds and when it starts to splutter, add the chopped onions and curry leaves, saute for 2-3 minutes. Then add salt and stir fry till they are golden brown in color.
5. Add turmeric powder, ginger and garlic paste, stir well for 3 minutes. Add the chicken pieces and keep stirring for 2-3 minutes.
6. Cover and cook for 7-8 minutes. Add the ground masala and mix well till the pieces are well coated with the masala.
7. Sprinkle a little water if needed (here i have not added, i kept stirring continuously), keep stirring till the chicken is well cooked and the masala is dry.
8. Garnish with fried curry leaves.
9. Serve hot with dal and steaming hot rice. Wow!!!
